Italian Hot Chocolate Recipe

What you’ll need for Italian Hot Chocolate (2-4 servings):
- 1½ cups (355ml) whole milk
- 1 Tbs (12.5g) sugar
- 3 Tbs (23g) cocoa powder
- 4 oz (112g) semi-sweet chocolate chips
- 1 Tbs (8g) cornstarch
- A pinch of kosher salt
- Crème fraîche or whipped cream and chocolate shavings for garnish
Whisk together the cornstarch with ½ of the milk in a small bowl, then set aside. In a small saucepan, add the sugar, cocoa powder, a pinch of kosher salt, and 1 cup of milk, then whisk to combine the ingredients and bring to a light simmer on medium heat.
Once it simmers, turn the heat low and add the cornstarch mix while whisking. Keep whisking until you get a smooth texture (about 3-4 min). Add the chocolate chips and continue wishing for 3 minutes until you get a velvety mix.

NOTES: If you want the hot chocolate to be less thick, use less cornstarch.
